SWEET GLUTINOUS RICE BALLS WITH PEANUTS

Ingredients

- 800g glutinous rice flour
- 70ml vegetable oil
- 125g shortening
- 25g cornstarch
- 1 egg white
- 550ml water
- Slab sugar to taste
- Crushed peanuts to taste
- Granulated sugar to taste

Method

1.Mix together the glutinous rice flour, oil, shortening, cornstarch, and egg white

2.Add the water in four batches until you get a smooth dough. Set aside for a few minutes

3.Divide into 20-25g pieces and roll into balls. Cook in boiling water for 10-15 minutes

4.Dissolve the slab sugar in water to make a syrup

5.Add the glutinous rice balls to the syrup and soak for a few minutes, turning continuously. Remove and set aside

6.Mix the crushed peanuts and the sugar (at a ratio of 1:1). Sprinkle over the glutinous rice balls before serving
