STEWED BLACK TRUFFLE NOODLE

Ingredients

- 100g Cantonese noodle

- 10g black truffle
- 20g chicken fat
- 20g lard
- 10g Welsh onion
- 50g water
- 10g light soy sauce
- 10g oyster sauce
- 10g peanut oil
- 10g dark soy sauce
- 5g sugar
- 2 edible flowers

Method

1. Cook the noodles in water and cool the water for later use


2. Shred Welsh onions and stir fry in peanut oil

3. In a pan put chicken fat, lard and black truffle sauce

4. Add oyster sauce, stir-fry and add saved water, bring to boil

5. Use light soy sauce, granulated sugar and dark soy sauce to season

6. Add cooked noodles and mix well with sauce

7. Add fried Welsh onion

8. Put in a plate, decorate with flowers and serve
