LOBSTER AND TOON SPROUTS WITH CRISPY TOFU SKIN

Ingredients

- 1 Boston lobster
- 100g toon sprouts
- 2 sheets of tofu skin
- 5g salt
- 15g olive oil

Method

1.Cook the lobster then remove the meat and mix with the salt and olive oil.

2.Cut the tofu skin into 6cm squares and then deep fry until crisp.
3.Plate up the crispy tofu skin and scatter over the tofu skin. Top with the lobster.
