STEAMED MUD CRAB AND CHINESE YELLOW WINE

Ingredients

1 mud crab

30g Huangjiu Chinese yellow wine (Chen nian hua tiao chiew)
15g aged soy sauce
10g onion
10g ginger
10g garlic

Method

1. Clean the mud crab


2. Break it in pieces

3. Remove the meat from the shell where possible

2. Chop crab meat and place in a plate

3. Cut finely the onions, ginger and garlic then put on the crab meat

4. Pour Chinese yellow wine on the crab and vegetables

5. Steam in a steamer

6. Finish with aged soy sauce and serve
