2 boxes of silken tofu
2 eggs
10g bonito flakes, plus more to serve
1 cup light soy sauce
2 tbsp mirin
2 tbsp sake
Scallions, to taste
Minced ginger, to taste


1.Cut the tofu into cubes and place on a serving platter. Hollow out a small trench on the top of the tofu. 

2.Add the bonito flakes, soy sauce, mirin, and sake to a pot and bring to a simmer over a low heat. Remove from the heat and strain.

3.For the eggs: Bring a pot of water to the boil and turn off the heat. Place the eggs in the water for 4 minutes and then rinse with cold water.

4.Crack the eggs and place on top of the tofu.

5.Scatter the scallions, ginger, and extra bonito flakes over the tofu, then pour over the soy sauce.
