CRISPY ROASTED PORK BELLY

Ingredients

- 3kg pork belly
- 150g salt
- 50g Leek
- 50g Sugar
- 50g Soy sauce
- 50g Spring Onion
- 50g Ginger

Method

1.Coat the skin of the pork with the salt and set aside for 1 hour.

2.Heat the oven to 150℃ and roast the pork for 30 minutes, then remove and leave to cool completely at room temperature.
3.Heat the oven to 200℃ and roast the pork for 20 minutes, then turn up the heat to 400℃ until the skin is completely blackened. Remove from the oven and scrape off all the blackened skin, using a little warmed oil to remove any leftover piece. Return the pork to a 200℃ oven and roast until golden brown.
