BRAISED PIG'S TROTTERS

Ingredients

- 200g diced sea cucumber
- 200g boneless pig’s trotters
- 100g diced leeks
- 20g shredded scallions

For the sauce:
- Oyster sauce
- dark soy sauce
- light soy sauce
- white sugar
- ground white pepper
- chicken bouillon powder
- sesame oil
- rice vinegar
- cornstarch

Method

1.Clean the sea cucumber and pig’s trotters. Deep fry until golden. Deep fry the shredded scallions.

2.Combine all the ingredients for the sauce with a little stock and cook for 2 minutes.
3.Add the sea cucumber and pig’s trotters back to the pan and thicken the sauce with a little cornstarch. Top with sesame oil and the deep-fried scallions to serve.
