1.Peel and butterfly the prawns, then mix with the marinade ingredients and set aside for 10 minutes.
2.Blanch the green beans and then use to stuff the prawns.
3.Blanch the prawns in boiling water and then remove and set aside. Heat some oil in a wok and quickly stir fry the prawns. Remove and set aside.
4.Add the crushed shallots and garlic to the wok and stir fry until fragrant, then add the XO sauce. Return the prawns to the wok and add 150ml of water. season with oyster sauce, Shaoxing wine, sugar, and salt.
5.Cook for 4 minutes until the sauce has reduced and then serve.
