BRAISED SEA CUCUMBER WITH WILD RICE

Ingredients

- Wild rice 30g
- Sea cucumber 4
- Chicken 1
- Yunnan ham 100g
- Leek 50g
- Ginger 30g
- Mineral water 20l

Method

1.Wash the sea cucumber with mineral water. Blanche in boiling salted water.

2.Simmer the chicken, ham, scallion, ginger, and water for 12 hours. Strain and set aside.
3.Cook the wild rice in the soup until tender. Add the sea cucumber and cook over a low heat for 3 minutes.
