Don’t get mislead by the title of the recipe. This is a Singaporean curry, lighter than the Indian one, with the pleasant sharpness of tamarind. The wine for the pairing is a refreshing Rose’, soft and with a clean and refreshing acidity. It’s cherry and strawberry tones to the palate are no too sweet and match well with the fragrance of the coconut and curry leave. The aromatic nuance of the Cabernet Sauvignon (from which is made the wine) are not totally lost but, of course, we are drinking a rose’, with a respectable finish.
