Description

This wine’s vineyard is located in Trifolera. The first of three crests extending from Tre Stelle to Martinenga, the Trifolera vineyard mention has always been famous for its soil and location quality, that’s the reason why the winemakers here plant their most qualitative indigenous vines.


Colour: Ruby colour with purple hints.
Aroma: Fruity character, dominated by fresh black cherries and blueberries.
Taste: Elegant, with velvety tannins and good balance between acidity and smooth texture.

Alcohol: 12%

Grape: 100% Dolcetto.

Ageing: 3 months in the bottle.


Winery

Located in the heart of the famous Rabajà zone, this small family-owned winery is run by people that possess an intimate knowledge of the Nebbiolo grape. With profound respect and knowledge of the Barbaresco terroir, and long-held family traditions, Giuseppe Cortese is able to craft some of Piedmont’s most characteristic wines. 

Born in Barbaresco, Giuseppe Cortese began a lifelong passion for winemaking by working with his father Giacomo in the family business. After several years of experience, he realized the future of high-quality Barbaresco wines was in developing the potential of the terroir. Giuseppe changed the wine business and the winery, improving vinification techniques and purchasing new land among the famous Rabajà vineyards.
Giuseppe’s son Piercarlo joined him in the 1990s, after graduating from the highly regarded Enological School of Alba. Today, Cortese is a typical small family-run winery, with Giuseppe’s wife Rosella and daughter Tiziana playing active roles in commercial aspects and public relations.

Wine pairing notes

This Trifolera has both freshness and fruitiness of Dolcetto d’Alba and its balsamic notes combine well with the texture and flavour complexity of this dish. Its reminiscences of juicy black cherries, black currants and violets together with the smooth tannins, are not overwhelmed by the spices and condiments. The wine has also enough persistence, on the bitterness notes, to balance the aftertaste of the dish.

Wine pairing notes

This simple, but flavourful dish by Chef Gu Zhihui is characterized by its smoothness and by the beautiful sweet aroma of the crunchy caramelized crust. The texture of the pork belly is smooth and it is in contrast with the crunchy and crispy crust. 
Langhe Dolcetto DOC by Giuseppe Cortese winery is the perfect match for this dish. In fact, the high acidity and firm tannins of the wine clean the mouth from the extra fattiness of the pork belly meat, preparing the mouth for another bite. Moreover, the primary red fruits aromas of the wine combine with the sweet flavour of the pork belly, creating a long-lasting pleasant aftertaste.
