The extra dry version of this Asolo Prosecco Superiore is an ideal match for the Yellow Fish Rolls of chef Jin Wei. Its both medium acidity and citrus notes, including lime, go very well with the deep fried fish. The persistent foam contrasts well the shrimp mayonnaise and the overall balance of the wine smoothens the sharpness of the horseradish nuances.
