Description

Montefalco Rosso Riserva DOC is the result of long and in-depth studies carried out by Arnaldo Caprai in both the agronomic and oenological fields to obtain high quality wines. A blend of Sangiovese, Sagrantino and Merlot which is left to mature for about 20 months in barrique followed by a long ageing in bottle. The Montefalco Rosso Riserva DOC of Arnaldo Caprai is a red wine of great character, fine and long-lived.


Colour: Deep ruby colour.
Aroma: Wild cherry preserved in spirits, chocolate, vanilla and black spices.
Taste: Full-bodied with rounded tannins and good acidity.

Alcohol: 14%

Grape: 70% Sangiovese, 15% Sagrantino, 15% Merlot.

Ageing: 20 months in oak barrels, 6 months in bottle.

Winery

In 1971 Arnaldo Caprai, a successful textile businessman, bought the Val di Maggio estate to fulfill his dream of producing his own wine. He started off with only 5 hectares. As time went by, he believed more and more in the great potential of the local varieties and most of all in Sagrantino. 

In 1988 his son Marco Caprai started managing the winery and with his passion and determination gave the necessary impetus to the production of top quality wines. Since 1991, huge investments was driven into the purchasing of new vineyards, scientific research and technological innovation.

Wine pairing notes

This pairing is not so easy, because the wine must be able to keep up with the black truffle but equally it must not overcome the delicate and sweet aroma of the chicken. 
This Rosso di Montefalco from Arnaldo Caprai winery is able to do this. On one hand, the wine has enough spices aromas to combine with the black truffle, enhancing the strong aromatic and spicy character of the pairing. On the other hand, the wine has smooth rounded tannins and sweet fruity notes and vanilla hints, perfect to match the delicate sweet aroma of the fried chicken.
The mouthful is first characterized by sweet aromas brought by the chicken and by the fruity aromas of the wine; the aftertaste is dominated by black spices notes and the strong aromatic note of black truffle.

Wine pairing notes

The floral elements of this Montefalco Rosso Riserva DOC, its wild rose, wild berry and savoury spices, including vanilla, enhance the divergent flavours of the ingredients in which the beef was marinated. The intense flavour of the fried beef is met by the bright acidity of the mid-weight structure of the wine and its velvety tannins.
