Description

Lambrusco di Sorbara is one of the most iconic wines of Emilia-Romagna region. Lambrusco grape is used to produce early-drinking red sparkling wines with an amazing fresh red fruit character. 


Paltrinieri LaRiserva is a pale red sparkling wine that undergoes 12 months on its fine lees. It is common for Lambrusco wines to undergo only 6 months lees ageing, but this wine can easily stand on its lees for longer time due to the high quality of the grapes.

Sorbara is a little village near Modena, one of the most important cities for Italian high-quality cuisine.

Colour: Blush pink with very fine and persistent perlage.
Aroma: Floral, grapefruit and rhubarb.
Taste: Pleasant, fresh, sapid and elegant.

Alcohol: 12%

Grapes: 100% Lambrusco di Sorbara.

Ageing: 12 months on its fine lees (Martinotti method)

Winery

Alberto Paltrinieri represents the 4th generation of Paltrinieri Winery. Winemaking tradition started in 1962 with Alberto’s grandfather, Achille, that started to plant his own vineyards. Nowadays, Alberto Paltrinieri manage the winery with his wife, Barbara.


The winery focused its production on Lambrusco, an indigenous red grape of Emilia-Romagna region. This grape is used to produce red sparkling wines thanks to low level of tannins and beautiful red fruit aromas. Paltrinieri winery produces 7 different styles of wine from Lambrusco grapes and a “Grappa” (Italian typical spirit) from the pomace of Lambrusco.

The Har Gow style dumplings of Chef Li are very delicate and deserve the company of an elegant red sparkling wine as this Paltrinieri LaRiserva is. The freshness, its steely character and lively acidity makes a particularly good match with both the texture of the dumpling and the taste of the crab roe and shrimps. 


The gentle hints of strawberries, raspberries, and some reminiscences of rhubarb, that is the typical fruits of the Lambrusco di Sorbara (here vinified using the Charmat method), further enhance the flavour of the dish, also thanks to its persistent bubbles.
